Default Pork Carnitas

Im gonna attempt makeing these today for my first time. I have a 5 lb picnic roast. Im gonna try half one way and half another. 1st half will just go in the roasting pan on low heat until it falls apart(shredded/stringy carnita). when done i will pull, spread on a cookie sheet and throw under the broiler to crispen everything up.

The 2nd half i will cube up and put in a large heavy frying pan,with a little vegtable oil. Then i guess you add water till you almost cover the meat and a cup of orange juice. simmer that for a couple hrs or longer, until you cook the water out. Once the water is done you should be cooking the pork in its own rindered fat, I believe this will take another hr on a low simmer.

I think the way there supposed to be done is cooked smothered in lard, long enough to pull apart or until tender

any other suggestions out there. Got my pork thawed out now and gonna head to the strore in a couple hrs. really the only seasoning i think i will use is salt and pepper. Any suggestions on that?

Ok got my pork cooking now and the house smells wonderfull! I cubed a big portion of pork and browned it really good in vegtable oil, removed most of the pork and deglazed the pan with 1 cup of orange juice, then added pork, 1 cup of water and 1/2 cup of chicken broth. Its been simmering for 1 1/2 hrs and is starting to cook down now. In about 45 minutes id say im gonna have perfect pork carnitas!!!!

LOL didnt take any pics,should of though turned out really good! Any one looking for something different try this it was awesome. When the braised meat was really tender i pulled it put it on a cookie sheet under the broiler then drizzled the sauce over it with the orange glaze, served it on tortilla shells with grn.onions,tomatoes,lettuce,and cheese.
super good stuff! LOL i didnt even mess with the part i roasted. Put it in the fridge and ill pull it tomarrow for sandwithces!

Now the pork coma begins

next time ill take pics and send to someone that knows how to post them
