I love green olives and when I saw this recipe I had to give them a try. Very simple with great results.
Spiced Green Olives
1 Jar Green Olives (I prefer large size)
½ Cup Tomato or V8 juice
1 T Olive oil
1 T Red Pepper Flakes
2 Cloves Chopped Garlic
1 t Dried Basil
1 t Dried Oregano
Drain olives discarding juice (or save juice for a dirty martini).
Add all spices to the top of the jar. Add olive oil, and then fill to top with tomato or V8 juice. Shake jar to blend. Add additional juice if necessary to cover olives. Refrigerate olives 3 to 10 days (shaking occasionally) before eating.
